With so many deadlines due before the end of the year, I like preparing quick and easy recipes that will give me energy to tackle my busy days ahead. Lately, my go to ingredient has been avocados!

I was never a huge avocado fan until I discovered you could use this amazing fruit in so many different ways. I was hooked! I use it in soups, as garnish, in smoothies and even as a base for my pasta sauce. But my favorite way to eat it is in Avocado Toast!

I love making Avocado Toast because you can change up the ingredients and create a different toast every time. It's a light breakfast or snack that will fill you up without feeling guilty.

My recipe is simple yet delicious and only has 6 ingredients, including WHOLLY® SIMPLY AVOCADO™.

• Ham
• Egg
• Red chili flakes
• Leafy greens


1. Toast bread
2. Pan fry ham
3. Hard boil or fry egg

Guilt Free Banana Ice Cream

The recipe is super easy and simple and only calls for ripe frozen bananas and a good food processor (which is important).

• 2 Frozen Ripe Bananas

Optional (but highly recommend):
• Add your favorite mix-ins
 * Nuts
 * Fruit
 * Chocolate
 * Spices
 * Nutella

1. Add bananas in the food processor
2. Blend for 1-2 minutes until smooth consistency
3. Add in mix-ins (optional)
4. Pour into a bowl and enjoy immediately as a soft serve! For firmer ice cream, freeze for 1 hour

After the bananas have been blended to reach the desired consistency, add mix-ins to the banana base. The possibilities are endless and you can create different flavor combinations depending on what you're in the mood for. 

For my creation, I added peanut butter powder, chocolate and an assortment of pecans and pumpkin seeds.

For a creamier texture, add coconut milk - although it's not necessary.

Halloween Themed Chips and Guac

Whenever I think of Halloween, I immediately envision fun Halloween parties. My favorite appetizer, and one that everyone loves, is chips and guac! Keeping with the theme, I wanted to transform this delicious appetizer into a scary monster with a fun twist.

Besides salsa, another great companion for chips and guac is cheese! And the Mini Babybel® kind is the perfect shape for the eyes for the guacamole monster!

Making the guac monster is super quick and easy. If you have kids, this would be a fun dish for them to create. 


• Mini Babybel® Cheese
• Black Olives
• Guacamole
• Blue Corn Toritlla Chips
• Red Chili Jelly


1. Set up station for easy assembly
2. Spread guacamole in any shape serving dish or plate
3. Cut Mini Babybel®  cheese in half (keeping circle shape)
4. Cut black olives in both circle and line shape
5. Place cheese, jelly and olives on top of the guacamole to form the eyes
6. Place tortilla chips above eyes

Crunchy Chocolate Covered Fruit

I've always had a big sweet tooth. Pastries, ice cream, cake, candy, you name it, I love it and eat it. Lately, I've been craving the combination of chocolate and fruit. I love the melt-in-your-mouth chocolate shell and the sweet fruit beneath. Not only are these treats great for dessert and snacking, but they make great gifts as well. Best part? They're super easy to make at home. No matter your cooking skills, chocolate covered fruit always turns out looking fancier than what it really took to make them.

My fruit of choice and that holds chocolate well, are bananas and strawberries. To add a little crunch, I love incorporating Honey Bunches of Oats with Almonds . It transforms the chocolate covered fruit and takes it to another delicious level!

• 2 Cups of Honey Bunches of Oats with Almonds
• Choice of Fruit (Strawberries and Bananas work well)
• 1 Cup of chocolate sauce (homemade or store bought)


1. Set up station for easy assembly
2. Roll bag of cereal with hand or rolling pin to reach desired size
3. Make sure fruit is clean and patted dry
4. Cut fruit and place toothpicks in them (ex: bananas)
5. Dip fruit in chocolate and roll into cereal mixture
6. Eat as-is or refrigerate for later

Tip: Make sure the strawberries are dry. If you have any water left from rinsing, the chocolate coating won't stick to the strawberry as well.

Baked Wonton Mozzarella Sticks

Whenever I go out to eat, and if it's on the menu, I typically order fried mozzarella sticks. They're my absolute favorite appetizer or snack. Sadly, not the most healthiest. Luckily, I found a way to still indulge in my cheesy obsession without all the unnecessary calories (and guilt).

Instead of using regular mozzarella cheese, I incorporated Weight Watchers Light Cheese Sticks that I bought from my local Publix supermarket. I also replaced breadcrumbs for wonton wrappers and opted to bake them versus frying them. With these three easy swaps you'll cut a significant amount of calories without sacrificing the taste.  

In less than 15 mins, you'll have a delicious healthier mozzarella cheese stick snack.

Make sure the cheese is frozen before placing in wonton wrapper. This will prevent the cheese from oozing out when baking.

After cheese sticks are wrapped, place in egg wash and roll them into a garlic, basil and parmesan cheese mixture (this step is optional).

Place in 400 degree oven and bake until golden brown.

Serve with your favorite marinara sauce and enjoy!

  • Mozzarella Light String Cheese Sticks (Weight Watchers)
  • Wonton wrappers
  • 1 Egg
  • Optional: Garlic, Basil, and Parmesan Cheese
  • Marinara Sauce


  1. Preheat oven to 400 degrees F and spray a baking sheet with cooking spray.
  2. Place 1/2 frozen cheese stick on one end of an wonton wrapper. Fold in the sides, then roll it as tightly as you can, until you get to the opposite edge of the wrapper. Optional: Roll into the basil, garlic and parmesan cheese mixture.
  3. Place desired number of cheese sticks on baking sheet.
  4. Bake for about 10 minutes, remove the pan from the oven, flip over the sticks and continue baking for about 5 minutes or until golden brown.
  5. Serve with marinara sauce.
