Summer Fun with Malibu Rum

I remember Malibu Coconut Rum with pineapple juice was the first alcoholic beverage I ever had. I couldn't believe how delicious and refreshing it was! It had the perfect blend of coconut and pineapple- two of my favorite fruits.

Fast forward ten years later and it's still one of my go-to drinks!

Whenever I think of summer and outdoor fun- Malibu Rum always comes to mind.

Malibu Rum is like sunshine in a bottle with a smooth, fresh flavor. That's why it's the world's best-selling coconut flavored Caribbean rum and my personal favorite. In addition to the classic coconut original, there are seven different flavors, including the New Malibu Lime.

What I love most about Malibu Rums is that the flavors pair perfectly with any mixer and you don't need too many ingredients to make a tasty drink. I added lemon-lime soda, ice, fresh mint leaves and a little bit of freshly squeezed lime juice to my glass.

Garnish with mint or a lime wedge, and you have yourself a refreshing summer drink.

Whenever you're hosting an outdoor pool party, a nicely decorated table for drinks and food is all you need and will make your party stand out.

If there is a theme involved, even better! You don't have to break the bank to have a nice party either. Incorporating ingredients and anything that is bright and shiny is always a fun way to take your party to the next level. Guests will appreciate it, and you'll look like an amazing host.

Whether with one friend or twenty, celebrations are meant to make you feel good. Being around water, good friends and delicious drinks, always makes me happy and excited to have more summer get-togethers.

Spring Snacking with My/Mo Mochi Ice Cream

The past couple of weeks have been crazy busy with work deadlines and apartment hunting. Add a two week trip to Italy that I recently took, and my schedule has been non-stop. I was either behind a computer or running around doing errands and taking pictures. Despite sometimes being chaotic, I love being busy and productive!

Whenever I go out with my friends, you can always bet on me ordering a sweet drink- no matter the day or time.

Start off by muddling pineapple and strawberries. Then add ice, Welch's Strawberry Breeze Refrigerated Cocktails and a splash of ginger ale soda. Garnish and you're done.

Need A Last-Minute Appetizer Idea? Create A Cheese Board!

Whenever I have friends over or need a last-minute appetizer idea, I always resort to making a cheese board.

Everyone loves cheese and pairing it with crackers or bread is always a crowd pleaser. For the ingredients, I typically just use whatever I have available that day in my kitchen. Making a cheese board is pretty straightforward and there is no right or wrong way to create them. The ingredients are based on your taste and what you would like to serve to your guests.

The possibilities are endless when it comes to creating a cheese board. There are so many different kinds of cheeses to choose from, but I would recommend including both a soft and hard cheese.

My favorites for soft are Brie and Goat cheese. I found a cranberry goat cheese that is the most delicious cheese I've ever had! Every time I serve it for my guests, they rave about it! Try to find it at your local grocery store and serve it to your friends at your next get together. Trust me; you'll thank me!

I normally like to add some fruit as well- typically either strawberries or grapes but I've seen figs on cheese boards. Figs look nice and would probably taste delicious with the cheese since it's sweet.

I love adding multigrain crackers because they're a perfect size and go great with any type of cheese. You can also add tortilla chips or bread- depending on the different ingredients and flavors on the board. 

Nuts and meats are always a great addition as well. 

When it comes to olives, I would include both green and dark olives to add a nice contrast in flavors and color. The three Pearls® Specialties I used for my board were the Pitted Kalamata, Garlic Stuffed Olives and Blue Cheese Stuffed Olives.

Accompany with your favorite wine with these delectable olives will add a fancy touch to your next get-together or Spring celebration!

Pasta A La Huancaina

Pasta a la Huancaina

Growing up, a dish my family would always make was Papa a la Huancaina. Served either as a side dish, main entree, or as a dip, the Huancaina sauce was always prepared at my house for any occasion. Even today, whenever my friends come over, they always request for me to make them that "creamy potato dish"!

Over the years, that "creamy potato dish" has become a popular culinary staple. Huancaina sauce, the cheesy and spicy cream that serves as the topping for Papa a la Huancaina, enhances almost any dish. There are many different ways to serve this delicious cheesy sauce, not just with Papa (potato) anymore. 

My personal favorites are: dip for fried yucca fries or served over pasta!

Since the Huancaina sauce has a cheese base, it works well for making the Pasta a la Huancaina fusion. 

I've tried many pasta brands and the one I love and always purchase is Barilla. Barilla is a blank canvas for any flavors to put a unique twist to an Italian favorite. Always al dente, always perfect!

Barilla Pasta

Traditionally, Huancaina is made with crackers, oil and aji amarillo. Although that version is how most people prepare it, my family has their own version and one that is always a big hit whenever I make it.

INGREDIENTS:

 • 8 oz of Barilla Spaghetti (Penne would also work)
 • 6 oz of Queso Blanco (white cheese)
 • 3 Slices of white bread- without the crust
 • 1 Cup of evaporated milk
 • 1/3 tsp of Salt
 • 1/2 tsp of Garlic powder
 • 1/2 tsp of Yellow food coloring
 • 1 tsp of Rocoto (hot sauce)

Pasta a la Huancaina- Barilla

INSTRUCTIONS:

1. Blend Queso Blanco and half a cup of evaporated milk
2. Add salt, garlic powder, yellow food coloring, hot sauce and blend
3. Add white bread and the remaining evaporated milk (half a cup). Blend until smooth consistency
4. Pour over hot cooked pasta
5. Serve with Parmesan cheese and Chili flakes (optional)
