Healthy Muffin Parfait with Garden Lites

Luckily for me, I've always been a vegetable person. Even as a young kid, I enjoyed anything green served on my plate.

My love for vegetables has only grown in my adult years. Unfortunately, I don't always have the time to cook up a nutrtious veggie meal. This is why I love finding new and creative ways to get my nutrients in-especially when I'm traveling or on the go.

Muffin parfait

INGREDIENTS:

 • 1 Muffin
 • 1/2 cup yogurt
 • Strawberries (or any fresh fruit)

INSTRUCTIONS:

1. Cut muffin into three pieces
2. Put down first muffin piece to serve as your base and pour a spoonful of yogurt
3. Put sliced strawberries (or any fruit) on top of the yogurt
4. Layer another piece of muffin and pour yogurt and sliced fruit on top
5. Place last muffin piece and decorate with a piece of strawberry

New Year, New Me! Getting healthy with Jenny Craig

The new year is the perfect time to set new goals and challenge yourself to do better in every aspect of your life. For most people, including myself, health is on the top of the list. Especially after over indulging during the holidays.
